Grandma’s Old-Fashioned Dried Beef

Long before freezers and modern food dehydrators, families had to find simple ways to make meat last. Grandma didn’t need a long list of ingredients—just good, lean beef, plenty of salt, garlic, black pepper, and patience. The meat was carefully trimmed, salted, and left to cure before being slowly dried, creating a chewy, deeply savory food that could be enjoyed on its own or added to beans, eggs, soups, and stews.

For 1 kg (2.2 lb) of lean beef, trim away all visible fat and slice the meat thinly. Mix 3–4 tablespoons of coarse salt, 1 tablespoon of black pepper, and 3–4 crushed garlic cloves. Rub the mixture thoroughly into every piece, then place the meat in a covered container and refrigerate for 24–48 hours, turning the pieces occasionally so the seasoning reaches everything evenly.

Traditionally, the cured meat would be hung in a cool, dry, well-ventilated place for several days. Today, however, simply hanging raw meat at room temperature isn’t considered a safe home-preservation method. For a safer version, heat the meat to 160°F (71°C) before drying, then use a dehydrator or oven to slowly remove the remaining moisture until the beef is firm and chewy. Once the dried beef has completely cooled, store it in a sealed container and refrigerate it for longer storage. Slice it thin and enjoy it as an old-fashioned snack, or chop it into beans, eggs, potatoes, or a hearty stew. The ingredients may be simple, but that was the beauty of grandma’s cooking—make something delicious from what you had, and waste nothing.
