Soong Mei-ling, better known as Madame Chiang, lived an extraordinary 106 years, surviving cancer at 40 and remaining active well into old age. 😳 The influential Chinese diplomat and wife of Chiang Kai-shek followed a remarkably disciplined routine, including small meals, regular sleep, time for reading and creative activities—and one surprisingly simple food she reportedly favored: celery.

Her daily habits were built around moderation. She reportedly began mornings with lemon water, ate several small meals and stopped eating before feeling completely full. She also dedicated time to reading, drawing and reflection, while maintaining a consistent sleep schedule. But celery became one of the foods most closely associated with her health-conscious lifestyle. 🥬

There may be more to celery than its low-calorie crunch. It contains fiber, antioxidants and plant compounds such as apigenin and luteolin, which have been studied for anti-inflammatory and other biological effects. Laboratory and animal research has produced interesting findings, including potential effects on cancer-related pathways—but there is no good evidence that celery itself prevented cancer or explains Madame Chiang’s longevity.

Her remarkable life was about far more than food. Madame Chiang became an internationally recognized diplomat, addressed the U.S. Congress during World War II, advocated for China and remained intellectually active for decades.
