High-Protein Thin Mint Chia Pudding (50g+ Protein, Low Sugar)

This High-Protein Thin Mint Chia Pudding is a creamy, mint-chocolate treat that delivers over 50 grams of protein while staying gluten-free and low in sugar. Made with Greek yogurt, protein powder, chia seeds, and a touch of peppermint extract, it combines the flavor of a Thin Mint cookie with the refreshing taste of a shamrock shake. The naturally vibrant green color comes from spirulina, not artificial food coloring, making it both festive and nutrient-rich.

The secret to its thick, smooth texture is soaking the chia seeds before mixing in the other ingredients. Once the chia seeds absorb the water, they are combined with Greek yogurt, protein powder, spirulina, and a few drops of peppermint extract. The result is a rich, mousse-like pudding that feels much more indulgent than traditional chia pudding. Since peppermint extract can be strong, it’s best to add it gradually and adjust to taste.

One of the highlights of this recipe is the chocolate shell. Chocolate chips and coconut oil are melted together until smooth, then poured over the pudding to create a thin layer on top. After a quick chill in the freezer, the chocolate hardens into a crackly shell that adds the perfect contrast to the creamy filling. A sprinkle of flaky sea salt can make the flavors stand out even more.

To make it, simply mix 1 tablespoon chia seeds with 3 tablespoons water and let thicken for 10 minutes. Stir in 1 cup Greek yogurt, 1 scoop protein powder, ¼ teaspoon spirulina, and peppermint extract. Top with melted chocolate made from 2 tablespoons chocolate chips and 1 teaspoon coconut oil, freeze for 10 minutes, and enjoy a filling breakfast, snack, or healthy dessert.
