Julia Child’s Perfect Hard-Boiled Eggs (Recipe and Secret)

Julia Child believed that mastering simple techniques was the foundation of great cooking, and perfect hard-boiled eggs are a wonderful example. With the right timing, careful handling, and an ice-water bath, you can make eggs with firm whites, tender yellow yolks, and shells that are easier to remove. They’re ideal for breakfast, egg salad, deviled eggs, or a quick protein-packed snack.

Ingredients: 6 large eggs, enough water to cover them by about 1 inch, and a bowl of ice water. Slightly older eggs are often easier to peel than very fresh ones. Bring the water to a full boil, then gently lower the eggs into the saucepan using a spoon. Let them boil uncovered for 30 seconds. Cover the pan, remove it from the heat, and let the eggs stand for 17 minutes. This timing is intended for large eggs; medium eggs may need about 15 minutes, while extra-large eggs may need around 19 minutes. Results can vary depending on egg size, starting temperature, and altitude.

When the cooking time is complete, carefully transfer the eggs into a bowl filled with ice and cold water. Leave them there for at least 15 minutes to stop the cooking process and cool the centers thoroughly. For easier peeling, gently tap each egg on a hard surface, roll it to create small cracks, and peel under running water. Starting at the wider end can help because the air pocket is often located there. 🧊

What about Julia Child’s egg-pricking secret? Pricking a tiny hole in the rounded end of an egg is sometimes recommended to release air and reduce cracking, but it isn’t necessary and doesn’t guarantee easier peeling. Careful handling and consistent cooking are more reliable priorities. To avoid gray-green rings around the yolks, don’t leave eggs cooking longer than necessary, and cool them promptly. Store hard-boiled eggs in their shells in the refrigerator at 40°F (4°C) or below and eat them within one week. Remember: the key to delicious eggs is accurate timing, gentle handling, and rapid cooling!
