Leftover ham is a common sight in the refrigerator, especially after holidays and large family meals. But how long is it actually safe to keep? If you have opened, cooked, or sliced ham that has been refrigerated for three weeks, it is far beyond the usual recommended storage period and should be discarded.

As a general guideline, cooked ham leftovers should usually be eaten within 3 to 4 days when promptly refrigerated at 40°F (4°C) or below. Opened sliced or deli ham also has a limited shelf life. Unopened, commercially packaged ham can last considerably longer, depending on its type, packaging and the manufacturer’s instructions. Dry-cured products such as prosciutto may follow different guidelines.

One important warning is that you cannot reliably judge food safety by smell or appearance. Spoiled ham may develop a sour odor, slimy texture, discoloration or mold, but harmful bacteria may be present without any obvious signs. Certain bacteria, including Listeria monocytogenes, can survive and grow at refrigerator temperatures, making proper storage times especially important for pregnant people, older adults, young children and those with weakened immune systems.

If ham has already spent three weeks in the refrigerator, don’t try to rescue it by frying, baking, tasting a small piece or freezing it afterward. Freezing can extend the life of fresh, safely stored ham, but it cannot reset the clock on food that has already been kept too long. When you’re unsure how long leftovers have been stored, the safest approach is simple: when in doubt, throw it out. 🥩
