If you have trouble making good scones, these might just do the trick. Extra baking powder and standing time helps to keep them light and fluffy.
Ingredients include 500g Woolworths Essentials Self-Raising Flour, 1 egg, 1 1/2 cup milk, 1 tbs icing sugar, 2 tsp baking powder, and 60g melted butter.
Step 1 sift dry ingredients into a bowl. Step 2 add beaten egg, milk and butter. Step 3 quickly combine all ingredients into a dough. Step 4 stand dough on a floured board for 20 minutes. Step 5 gently roll out to required thickness (about 2cm). Step 6 cut out circles using the rim of a glass dipped in flour. Step 7 stand scones close together on a lightly floured baking tray for a further 15 minutes. Step 8 bake at 210C for 10 minutes.
Equipment needed is 1 bowl and 1 baking tray. The dough will be fairly sticky, so when working it try not to add too much extra flour. This recipe was photographed by Greer Worsley for Australia’s Best Recipes.
