Vanilla Chia Seed Pudding

With just four clean ingredients, it transforms overnight into a silky, tapioca-like treat. Inspired by traditional Latin American chia fresca, this pudding is naturally gluten-free, vegan, and paleo-friendly, costing under two dollars per serving. You will need ¼ cup of chia seeds, one cup of unsweetened almond milk, one to two tablespoons of maple syrup or honey, ½ teaspoon of vanilla extract, and a pinch of salt.
