Fresno Poppers

Fresno poppers are a modern twist on the classic jalapeño popper. Named for the Fresno chile—grown in California’s Central Valley—this appetizer celebrates balanced heat. Fresnos are slightly sweeter and fruitier than jalapeños, with gentle warmth that deepens as they ripen to red. Stuffed with creamy cheese and wrapped in crisp bacon, they’re perfect for backyard barbecues, game-day gatherings, or holiday parties. You’ll love the crispy bacon meets creamy filling texture. Halve twelve to sixteen fresh Fresno chiles lengthwise. Remove seeds and membranes to control heat. Pat dry. Mix eight ounces of softened cream cheese with one cup of shredded sharp cheddar or Monterey Jack. Add garlic powder if you like. Fill each chile half, slightly overfilling. Wrap each with a half-slice of thin-cut bacon, tucking ends underneath. Place seam-side down on a parchment-lined baking sheet. Bake at 400°F for fifteen to twenty minutes until bacon is crisp and filling is bubbly. Broil for the last one to two minutes for extra crispness. Watch closely.

Let cool for two to three minutes before serving. The filling is extremely hot. Serve with ranch dressing, sour cream, or a cilantro-lime crema. Pair with buffalo wings and cold beer for game day. Or elevate with avocado or Greek yogurt on crostini. Wear gloves when handling chiles—capsaicin irritates skin. Dry chiles well so bacon sticks. Thin-cut bacon works best. Don’t overcrowd the pan. Leave space for air circulation.

Store cooled poppers in an airtight container for up to two days. Reheat in a 375°F oven or air fryer for five to seven minutes to restore crispness. Freeze unbaked poppers for up to one month. Bake from frozen, adding five to seven minutes. Best enjoyed fresh. While the bacon is crisp and the filling molten. Leftovers are still delicious but won’t match that just-out-of-the-oven texture. Make them once. They’ll become a regular request. That’s the power of a good popper. And Fresnos are the secret. Not too hot. Just right. That’s the sweet spot. Literally.
